1、個(gè)重要的因素便是溫度。紅酒較佳的保存溫度應(yīng)該是13℃左右。溫度較好保持恒定,否則會(huì)對(duì)酒的質(zhì)量產(chǎn)生非常大損害。隨著溫度的升高,酒體的成熟所需時(shí)間也會(huì)減少,酒的風(fēng)味會(huì)越來越比較不光滑,還可能因過分空氣氧化造成酒的變質(zhì)。

2、環(huán)境濕度的影響主要作用于瓶塞,環(huán)境濕度一般在60%—70%比較適合。環(huán)境濕度太低,瓶塞會(huì)越來越干燥,影響密封實(shí)際效果,讓更多的空氣與酒接觸,加速酒的空氣氧化,導(dǎo)致酒質(zhì)量下降。當(dāng)然,環(huán)境濕度過高也不好,瓶塞發(fā)霉也會(huì)破壞酒的質(zhì)量。

3、光線中的紫外線對(duì)酒的損害也是非常大的,也是加速酒空氣氧化過程的根本原因之一,因此,要想長(zhǎng)期保存的紅酒一定要放進(jìn)遮光的地方。

4、紅酒裝在桶中,其變化是一個(gè)緩慢的過程,振動(dòng)會(huì)讓紅酒加速成熟,當(dāng)然結(jié)果也是讓酒越來越不光滑。所以應(yīng)該放進(jìn)遠(yuǎn)離振動(dòng)的地方,而且不要經(jīng)常搬動(dòng)。

5、還有便是酒桶的放置。大家都知道紅酒要橫放,其實(shí),瓶口向上傾斜15度也是可以的。對(duì)于需要儲(chǔ)存長(zhǎng)時(shí)間的紅酒,桶口向下的放置方法是不可取的。因?yàn)榧t酒存放時(shí)間長(zhǎng)了會(huì)有沉定,平放或者瓶口向上略微傾斜,沉定就會(huì)集聚在底部;而如果瓶口斜放,沉定就會(huì)集聚在瓶口處,時(shí)間長(zhǎng)了會(huì)粘在那里,倒酒的時(shí)候,會(huì)連沉定一起倒入酒杯,影響酒的口感。
